Berry Compote

A beautifully textured and delicious sauce that combines well with ice cream, yoghurt or dolloped over meringues and pavlovas.


Ingredients

  • 3 cups frozen berries, one type or a mixture

  • 2 bay leaves

  • 1 vanilla pod

  • 1 cup caster sugar


Method

  1. Put all the ingredients in a small stainless steel pot, stirring until the sugar has dissolved

  2. Simmer gently for 15-20 minutes until the mixture has reduced and is nice and syrupy

  3. If storing, keep the bay leaves and vanilla in the compote, if serving remove them
