Chocolate Apricot Slice

This is another wonderful recipe shared by Pip McKay.

Makes about 20 slices

Ingredients

  • 180 grams brown sugar

  • 1 tin condensed milk

  • 2 packets round wine biscuits

  • 250 grams butter

  • 2 cups chopped dried apricots

  • Coconut for decoration


Method

  1. Line a sponge roll tin with baking paper

  2. Crush the wine biscuits in food processor

  3. In a large pot melt the butter and the sugar together

  4. Stir in the condensed milk (using a whisk here will help to blend the mixture to a creamy even consistency)

  5. Mix in the crushed biscuits and chopped apricots

  6. Press the mixture into the lined tin

  7. Sprinkle coconut over the top

  8. Put in the fridge to set

  9. When firm cut into fingers or squares

  10. Store in an air-tight container in the fridge
