Chocolate Date & Peanut Slice

Makes about 20 slices

Ingredients

  • 400 grams fresh dates

  • 1/3 cup smooth peanut butter

  • 2 teaspoons vanilla paste

  • 1 cup quinoa puffs (rice bubbles can be substituted here)

  • ½ cup unsalted, roasted peanuts - chopped

  • 100-gram block 70% dark chocolate


Method

  1. Line a loaf tin or small slice tin with baking paper making sure you have excess up 2 sides to help get the slice out of the tin when ready

  2. Put the dates, vanilla and peanut butter in the bowl of a food processor and pulse to process

  3. Scrape down the sides and continue to pulse until everything is well combined

  4. Transfer the date mixture to a large mixing bowl and add the quinoa puffs and peanuts

  5. Using a wooden spoon or spatula mix well to combine the mixture. It is quite stiff and sticky so wiping the spatula with a smudge of oil can help with the mixing

  6. Put the date mixture into the prepared tin and using the back of a large spoon press it down firmly to get a smooth, even surface

  7. Melt the chocolate and spread it over the top of the slice

  8. Put it in the fridge to set

  9. Cut the slice into pieces-Using a knife heated in hot water and then dried will make cutting the slice much easier

  10. Store in an airtight container in the fridge
