Chocolate Weetbix Slice

Makes about 20 slices

Ingredients

CHOCOLATE ICING

  • 1 cup icing sugar

  • 1 tablespoon butter – melted

  • 4 teaspoons cocoa

  • Hot water to mix

BASE

  • 180 grams butter

  • 1 teaspoon vanilla essence

  • 1 cup desiccated coconut

  • 3 weetbix

  • 1 cup flour

  • 1 teaspoon baking powder

  • ¾ cup sugar

  • ¼ cup cocoa


Method

For the base:

  1. Preheat the oven to 180’C

  2. Melt the butter and add the vanilla

  3. Put the dry ingredients in a large bowl, pour in the butter mixture and combine well

  4. Press the mixture into a lined slice tin

  5. Bake for 15-20 minutes until firm

  6. Remove from the oven and allow to cool

  7. Ice with chocolate icing

  8. Top with coconut

For the icing:

  1. Sift the icing sugar and cocoa into a medium sized bowl

  2. Pour in the melted butter and combine-the mixture will be stiff and lumpy

  3. Add hot water in teaspoon portions.

  4. Combine well after each addition until you have the consistency of icing you would like-generally like soft butter so it is easy to spread over the slice

  5. Top with coconut if desired
