Date, Peanut Butter & Cocoa Balls

Makes: 20

A super easy, healthy snack to have stored in the fridge. They will keep for ages in an airtight container.


Ingredients

  • 1 ½ cups (about 275 grams) pitted, fresh dates

  • ¼ cup toasted almonds

  • 1/3 cup smooth peanut butter

  • 1 tablespoon Dutch cocoa, plus extra for dusting


Method

  1. Put the dates in the bowl of a food processor and pulse until they are coarsely chopped.

  2. Add the almonds, peanut butter and cocoa and pulse again until the mixture is finely chopped and well combined

  3. Slightly dampen your hands and roll the mixture into small balls (about 2 teaspoons of mixture per ball)

  4. Roll in the extra cocoa and place on the baking tray

  5. Put in the fridge to firm up then store in an airtight container and keep in the fridge
