Swedish Crackers

These crackers are super easy to put together and bake. They will last for ages in an airtight, preferably glass, container or jar. Once you have the knack of the basic recipe try other flavour combinations like rosemary and chilli, cumin, oregano and paprika or any other combination you think would work well.


Ingredients

  • 1/4 cup wholemeal rolled oats

  • 1/4 cup pumpkin seeds

  • 1/4 cup sesame seeds

  • 1/4 cup sunflower seeds

  • 1/4 cup linseed

  • A little less than one cup of gluten free flour

  • 1 teaspoon flaky salt

  • 1/2 finely grated parmesan cheese

  • 1/4 cup olive oil

  • 1/2 cup water


Method

  1. Heat the oven to 180’C

  2. Combine all ingredients together in a large bowl

  3. Divide mixture in half

  4. Place first half between 2 sheets of baking paper and roll out until very thin

  5. Make cut marks in the mixture the size and shape you would like your finished crackers

  6. Bake 20-30 minutes until golden and have a hollow sound
