Tomato & Couscous Soup

Serves 4

A flavoursome tomato soup made a bit more robust by adding couscous. Coriander, if you have some on hand, is a great addition, but if it’s not a favourite flavour, mint or parsley work just as well.

Ingredients

  • 3 tablespoons olive oil

  • 1 large red onion

  • 3 cloves garlic, crushed

  • 2 x 400g cans chopped tomatoes

  • 2 tablespoons tomato paste

  • 4 cups chicken or vegetable stock

  • ½cup instant couscous

  • Sea salt and freshly ground black pepper

  • ¼ cup fresh coriander (or mint or parsley)


Method

  1. Heat oil and onion in a large saucepan and cook over a moderate heat for about 10 minutes until the onion is softened but not coloured.

  2. Add garlic, tomatoes, tomato paste and stock, bring to the boil, the simmer for 15 minutes.

  3. Add couscous and simmer for another 5-10 minutes or until couscous is swollen and tender to the bite.

  4. Season with salt and pepper and served sprinkled with chosen herb(s)
