5 Minute Microwave Brownie

Makes one cake

Ingredients

  • 100 grams butter

  • 2 eggs

  • 1 cup sugar

  • 1 teaspoon vanilla essence

  • ¾ cup flour

  • ¼ cup cocoa

  • 1 teaspoon baking powder

  • ¼-1/2 cup walnuts (optional)

  • ½ cup chocolate chips for over the surface


Method

  1. Grease a ring style cake tin suitable to use in the microwave

  2. Sift the flour, baking powder and cocoa together into a bowl

  3. Melt the butter in a medium sized microwave bowl

  4. Beat the eggs, vanilla and sugar into the butter with a fork or rubber scraper

  5. Fold in the dry ingredients, and walnuts if using, and stir until just combined. Take care not to over-mix as it will make the brownie tough

  6. Spoon the mixture into the prepared cake dish and spread so that it is roughly evenly distributed

  7. Sprinkle the extra chocolate pieces over the top

  8. Microwave on full power for 4 minutes then in 30 second intervals until cooked.  You will know as the cake starts to pull away from the side of the tin, or a skewer inserted into the body of the cake will come out clean

  9. Cool in the tin, turn out and dust with icing sugar to serve

It is hard to find good quality chocolate chips and they can be expensive. I usually just use chocolate from a large block: either 70% dark chocolate, milk chocolate or a mixture depending on what is in the cupboard, and cut it into small pieces to the right quantity.
