Coconut Date Squares

Makes about 20


Ingredients

  • 250 grams dates

  • 1 cup brown sugar

  • 2 eggs lightly beaten

  • 1 cup sugar

  • 250 grams butter

  • 2 x 250 gram packets of wine biscuits

  • 1 tablespoon cocoa, dissolved in hot water

  • 1 teaspoon vanilla

  • Coconut for rolling


Method

  1. Line a square cake tin with baking paper

  2. Chop the dates into small pieces

  3. Crush the wine biscuits until broken and grainy with a few bigger chunks remaining

  4. Put the butter, dates, brown sugar, white sugar, eggs and dissolved cocoa into a saucepan

  5. Place over a low heat

  6. Stir to combine and cook very gently for 5 minutes - DO NOT BOIL

  7. Add the biscuits and vanilla to the date mixture

  8. Mix well

  9. Press into the cake tin and put in the freezer

  10. Once frozen, remove and cut into squares or slices and roll in coconut

  11. Place in an airtight container and put back in the freezer

  12. Eat from frozen
